A festive, creamy, sweet-savory cheese log loaded with cranberries, apricots, and crunchy nuts—perfect for crackers or sliced baguette!


🧾 Ingredients

Cheese Log

8 oz cream cheese, softened

½ cup dried cranberries, chopped

¼ cup chopped dried apricots

¼ cup chopped pecans or walnuts

2 tablespoons honey or maple syrup

½ teaspoon vanilla extract

Pinch of salt

Coating

¼ cup chopped pistachios

¼ cup chopped pecans or almonds

2 tablespoons dried cranberries, finely chopped


🥣 Instructions

  1. Mix the base:
    In a medium bowl, combine the softened cream cheese, dried cranberries, apricots, pecans/walnuts, honey, vanilla extract, and a pinch of salt. Mix until everything is evenly incorporated.
  2. Shape the log:
    Transfer the mixture onto a piece of plastic wrap. Shape it into a log (or ball), wrap tightly, and refrigerate for 1–2 hours to firm up.
  3. Prepare the coating:
    On a plate, mix pistachios, pecans/almonds, and chopped cranberries.
  4. Coat the log:
    Unwrap the chilled cheese log and gently roll it in the nut–fruit mixture until fully covered.
  5. Chill again:
    Refrigerate for at least 30 minutes before serving for clean slices and the best texture.

🍽️ Serving Suggestions

Serve with crackers, pretzels, toasted baguette slices, or apple wedges.

Drizzle with a little extra honey for shine and sweetness.
