❄️ Pecan Snowball Cookies – Detailed Recipe
📝 Ingredients
1 cup (226 g) unsalted butter, softened
½ cup (60 g) powdered sugar
1 teaspoon vanilla extract
2 ¼ cups (280 g) all-purpose flour
¼ teaspoon salt
1 cup (120 g) finely chopped pecans (or walnuts)
Extra powdered sugar for rolling
✨ Instructions
1️⃣ Cream the Butter & Sugar
- In a large bowl, beat the softened butter and ½ cup powdered sugar together until creamy and smooth.
- Add the vanilla extract and mix again.
2️⃣ Add Dry Ingredients
- Add the flour and salt.
- Mix just until the dough starts coming together (it will look crumbly at first—that’s normal).
- Fold in the finely chopped pecans.
👉 The dough should be soft and slightly crumbly but hold together when pressed.
3️⃣ Chill the Dough
Cover the dough and refrigerate for 20–30 minutes.
This helps the cookies hold their shape and prevents spreading.
4️⃣ Shape the Cookies
- Preheat the oven to 350°F (180°C).
- Scoop about 1 tablespoon of dough and roll it into a ball.
- Place the dough balls on a baking sheet lined with parchment paper.
5️⃣ Bake
Bake for 12–14 minutes, or until the bottoms are lightly golden.
The tops should remain pale (they don’t brown much).
6️⃣ Roll in Powdered Sugar (Twice!)
While still warm:
- Roll each cookie in powdered sugar.
- Let them cool completely.
- Roll again in powdered sugar to get that thick snowy coating.
This double coating gives the classic snowball look ❄️✨
