🥦 Creamy American Broccoli Soup
Rich, smooth, and comforting — perfect for weekly dinners and cozy nights!
🧾 Ingredients
Vegetables
1 head of broccoli, cut into florets
1 onion, finely chopped
1 carrot, chopped (optional but adds sweetness)
2 cloves garlic, minced
Fats & Liquids
1 tbsp vegetable oil
2 tbsp butter
3 cups chicken or vegetable broth
1–1½ cups milk or heavy cream (depending on how creamy you want it)
Dry Ingredients
2 tbsp all-purpose flour
Salt & pepper, to taste
1/4 tsp nutmeg (optional but delicious)
1/2 cup shredded cheddar cheese (optional, for extra creaminess)
👩🍳 Instructions
- Sauté the vegetables
- In a large pot, heat oil and butter over medium heat.
- Add the onion, carrot, and garlic.
- Sauté for 3–4 minutes until soft and fragrant.
- Add broccoli
- Add the broccoli florets to the pot.
- Stir for 2 minutes to coat with flavor.
- Create the creamy base
- Sprinkle 2 tbsp flour over the vegetables.
- Stir well and cook for 1 minute (this removes the raw flour taste).
- Slowly pour in the broth, stirring continuously so no lumps form.
- Simmer
Bring to a boil, then reduce heat.
Cover and simmer for 12–15 minutes, until the broccoli is soft.
- Blend
Use an immersion blender to puree the soup until smooth.
OR
Transfer to a blender carefully, then return to the pot.
- Make it creamy
- Reduce heat to low.
- Stir in milk or heavy cream.
- Add salt, pepper, and nutmeg.
- If using cheese, add it now and stir until melted.
- Serve
Pour into bowls.
Add a swirl of cream or sprinkle of cheddar on top.
Serve with warm bread or croutons.
