🥦 Creamy American Broccoli Soup

Rich, smooth, and comforting — perfect for weekly dinners and cozy nights!


🧾 Ingredients

Vegetables

1 head of broccoli, cut into florets

1 onion, finely chopped

1 carrot, chopped (optional but adds sweetness)

2 cloves garlic, minced

Fats & Liquids

1 tbsp vegetable oil

2 tbsp butter

3 cups chicken or vegetable broth

1–1½ cups milk or heavy cream (depending on how creamy you want it)

Dry Ingredients

2 tbsp all-purpose flour

Salt & pepper, to taste

1/4 tsp nutmeg (optional but delicious)

1/2 cup shredded cheddar cheese (optional, for extra creaminess)


👩‍🍳 Instructions

  1. Sauté the vegetables
  2. In a large pot, heat oil and butter over medium heat.
  3. Add the onion, carrot, and garlic.
  4. Sauté for 3–4 minutes until soft and fragrant.

  1. Add broccoli
  2. Add the broccoli florets to the pot.
  3. Stir for 2 minutes to coat with flavor.

  1. Create the creamy base
  2. Sprinkle 2 tbsp flour over the vegetables.
  3. Stir well and cook for 1 minute (this removes the raw flour taste).
  4. Slowly pour in the broth, stirring continuously so no lumps form.

  1. Simmer

Bring to a boil, then reduce heat.

Cover and simmer for 12–15 minutes, until the broccoli is soft.


  1. Blend

Use an immersion blender to puree the soup until smooth.
OR

Transfer to a blender carefully, then return to the pot.


  1. Make it creamy
  2. Reduce heat to low.
  3. Stir in milk or heavy cream.
  4. Add salt, pepper, and nutmeg.
  5. If using cheese, add it now and stir until melted.

  1. Serve

Pour into bowls.

Add a swirl of cream or sprinkle of cheddar on top.

Serve with warm bread or croutons.
