⭐ Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce
🧾 Ingredients
For the Salmon
2 salmon fillets
1 tbsp olive oil
2 tbsp butter
Salt & black pepper (to taste)
½ tsp paprika (optional for color)
½ tsp garlic powder (optional)
For the Creamy Garlic Sauce
1 tbsp butter
3–4 cloves garlic, minced
1 cup sliced mushrooms
2 cups fresh spinach
½ cup heavy cream (or half & half)
¼ cup chicken broth (or water)
¼ cup grated Parmesan cheese
½ tsp Italian seasoning
Salt & pepper to taste
Squeeze of lemon (optional but amazing!)
🔥 Instructions
1️⃣ Sear the Salmon
- Pat salmon dry and season with salt, pepper, paprika, and garlic powder.
- Heat olive oil + 2 tbsp butter in a skillet over medium-high heat.
- Place salmon skin-side down (if using skin-on) and cook 4–5 minutes until golden.
- Flip and cook another 2–3 minutes, until salmon is 90% cooked.
- Remove salmon from the pan and set aside.
2️⃣ Cook the Vegetables
- In the same skillet, add 1 tbsp butter.
- Add the garlic and cook 30 seconds until fragrant.
- Add mushrooms and cook 3–4 minutes until softened and browned.
- Add spinach and stir until wilted.
3️⃣ Make the Creamy Sauce
- Pour in the chicken broth, scraping brown bits from the pan for flavor.
- Add the heavy cream, Parmesan, and Italian seasoning.
- Stir and simmer for 2–3 minutes until thickened slightly.
- Taste and season with salt, pepper, and lemon juice if desired.
4️⃣ Bring It All Together
- Return the salmon fillets to the pan, spoon sauce over the top.
- Lower heat and simmer 2 minutes so flavors combine.
