Mexican Casserole :

A hearty, flavor-packed baked dish layered with seasoned beef, beans, salsa, and cheese — all in one dish.

Ingredients :

1 lb ground beef or turkey
1 small onion, diced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 cup salsa
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar or Mexican-blend cheese
6 small corn tortillas, chopped or torn
Optional toppings: sour cream, avocado, chopped cilantro, jalapeños

Instructions:

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook the beef:
In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
Season:
Stir in taco seasoning, diced tomatoes, beans, corn, and salsa. Simmer for 5–7 minutes.
Layer the casserole:
In the baking dish, spread half the tortilla pieces on the bottom. Top with half the beef mixture and half the cheese. Repeat layers.
Bake:
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes, until cheese is melted and bubbly.

Serve :

Let rest for 5 minutes before slicing. Add toppings of choice and enjoy.
