Soft, buttery cookies packed with sweet cherry pieces and chocolate chips, then topped with a smooth chocolate coating. These cookies taste just like classic chocolate-covered cherries, but in an irresistible cookie form—perfect for holidays, parties, or gifting.


📝 Ingredients (Makes 20–24 cookies)

Cookie Dough:

1 cup unsalted butter, softened (room temperature)

¾ cup granulated sugar

¼ cup brown sugar

1 large egg

1 teaspoon vanilla extract

2¼ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

¾ cup chocolate chips (semi-sweet or dark)

1 cup chopped cherries (maraschino or jarred cherries), well drained and patted dry

Chocolate Topping:

1½ cups chocolate chips or chopped chocolate

1 teaspoon vegetable oil or butter (for a smooth finish)


👩‍🍳 Instructions (Step by Step)

1️⃣ Prepare the Oven

Preheat your oven to 350°F (180°C)

Line a baking sheet with parchment paper


2️⃣ Cream the Butter and Sugars

In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together

Mix for 2–3 minutes until light, fluffy, and creamy


3️⃣ Add Wet Ingredients

Add the egg and mix until fully combined

Stir in the vanilla extract


4️⃣ Mix Dry Ingredients

In a separate bowl, whisk together:

Flour

Baking powder

Salt

Gradually add the dry ingredients to the wet mixture

Mix just until combined (do not overmix)

Carefully fold in the chopped cherries so they are evenly distributed
