Christmas Roll Cake – A Festive Delight!

- 4 large eggs (room temperature)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup whole milk
- Powdered sugar (for dusting)
- 8 oz cream cheese, softened
- 1/2 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest (optional)
- 1 tablespoon light rum or rum extract (optional)
- 1/2 cup heavy whipping cream
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- A pinch of cinnamon (optional)
- Preheat the oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
- In a large bowl, beat the eggs and granulated sugar together with an electric mixer on high speed until the mixture is light and fluffy (about 5-7 minutes).
- Add the vanilla extract and mix in.
- Sift the flour, baking powder, salt, cinnamon, and nutmeg together. Gradually fold the dry ingredients into the egg mixture until just combined. Gently fold in the milk.
- Pour the batter into the prepared pan and spread it out evenly. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven, and immediately dust a clean kitchen towel with powdered sugar. Turn the cake out onto the towel and remove the parchment paper. Roll the cake up in the towel while it’s still warm, and allow it to cool completely.
- In a medium mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy. Add the heavy whipping cream, vanilla extract, and orange zest (if using). Continue to beat until the mixture is thick and fluffy. Add the rum or rum extract (if using) for an extra festive flavor.
- Unroll the cooled cake and spread the filling evenly over the surface. Carefully roll the cake back up with the filling inside, using the towel to help guide it. Place the rolled cake on a serving platter, seam side down. Refrigerate for at least 30 minutes to set.
- In a mixing bowl, beat the heavy whipping cream with powdered sugar, vanilla extract, and cinnamon (if using) until soft peaks form. Spread or pipe the frosting over the top of the cake.
- Dust the cake with powdered sugar for a snowy finish. Slice and serve this festive dessert to your guests!
