A simple, comforting breakfast passed down through generations—crispy on the outside, tender inside, and full of savory flavor.

Ingredients

1 large white radish, shredded

1 small handful dried shiitake mushrooms

Hot water, for soaking the mushrooms

2–3 sausages (or protein of your choice), finely chopped

1 piece fresh ginger, minced

2–3 green onions, chopped

Salt, to taste

Instructions

  1. Soak the dried shiitake mushrooms in hot water for 15–20 minutes until soft. Squeeze dry and finely chop.
  2. Peel and shred the white radish. Lightly squeeze out excess moisture.
  3. In a bowl, combine the shredded radish, mushrooms, sausage, ginger, green onions, and salt. Mix well.
  4. Heat a lightly oiled pan over medium heat.
  5. Spoon the mixture into the pan, gently flattening into small pancakes.
  6. Cook for 3–4 minutes per side, until golden brown and crisp.
  7. Serve hot—perfect on its own or with a light dipping sauce.
