Mediterranean Baked Fish Delight
A light, healthy, and flavorful Mediterranean-style baked fish with lemon, garlic, and herbs—perfect for a quick dinner.
Ingredients (Serves 2)
2 white fish fillets (cod, halibut, tilapia, sea bass, or haddock)
2 tbsp olive oil
1 lemon (juice + zest)
2 cloves garlic, minced
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp paprika (optional)
½ tsp dried oregano or thyme
¼ tsp chili flakes (optional, for heat)
1 small tomato, sliced
½ small red onion, thinly sliced
2 tbsp fresh parsley or basil, chopped
Optional: sliced olives or capers for extra Mediterranean flavor
Instructions
- Preheat the oven
Preheat your oven to 190°C (375°F). Lightly grease a baking dish with olive oil. - Prepare the marinade
In a small bowl, mix:
Olive oil
Lemon juice and zest
Minced garlic
Salt, pepper, paprika, oregano, and chili flakes
- Season the fish
Place the fish fillets in the baking dish. Pour the marinade evenly over the fish, making sure both sides are well coated. - Add vegetables
Arrange tomato slices and red onion around and on top of the fish. Add olives or capers if using. - Bake
Cover loosely with foil and bake for 15 minutes.
Remove foil and bake for another 5–8 minutes, until the fish flakes easily with a fork. - Finish and serve
Sprinkle with fresh parsley or basil. Add extra lemon wedges if desired.

Serve with roasted potatoes, rice, couscous, or steamed vegetables
Great with a simple Greek salad or crusty bread
Tips
Do not overbake—white fish cooks quickly
For extra moisture, add 2–3 tbsp vegetable or fish broth before baking
