Mediterranean Baked Fish Delight

A light, healthy, and flavorful Mediterranean-style baked fish with lemon, garlic, and herbs—perfect for a quick dinner.

Ingredients (Serves 2)

2 white fish fillets (cod, halibut, tilapia, sea bass, or haddock)

2 tbsp olive oil

1 lemon (juice + zest)

2 cloves garlic, minced

½ tsp salt (or to taste)

¼ tsp black pepper

½ tsp paprika (optional)

½ tsp dried oregano or thyme

¼ tsp chili flakes (optional, for heat)

1 small tomato, sliced

½ small red onion, thinly sliced

2 tbsp fresh parsley or basil, chopped

Optional: sliced olives or capers for extra Mediterranean flavor


Instructions

  1. Preheat the oven
    Preheat your oven to 190°C (375°F). Lightly grease a baking dish with olive oil.
  2. Prepare the marinade
    In a small bowl, mix:

Olive oil

Lemon juice and zest

Minced garlic

Salt, pepper, paprika, oregano, and chili flakes

  1. Season the fish
    Place the fish fillets in the baking dish. Pour the marinade evenly over the fish, making sure both sides are well coated.
  2. Add vegetables
    Arrange tomato slices and red onion around and on top of the fish. Add olives or capers if using.
  3. Bake
    Cover loosely with foil and bake for 15 minutes.
    Remove foil and bake for another 5–8 minutes, until the fish flakes easily with a fork.
  4. Finish and serve
    Sprinkle with fresh parsley or basil. Add extra lemon wedges if desired.

Serving Suggestions

Serve with roasted potatoes, rice, couscous, or steamed vegetables

Great with a simple Greek salad or crusty bread


Tips

Do not overbake—white fish cooks quickly

For extra moisture, add 2–3 tbsp vegetable or fish broth before baking

You can also cook this in foil packets for easy cleanup
