🧀 Cheesy Mashed Potato Puffs
Crispy on the outside, soft and cheesy on the inside—these little bites are perfect as a snack, side dish, or party appetizer!
📝 Ingredients
2 cups mashed potatoes (cold or room temperature)
1 cup shredded cheese (cheddar, mozzarella, or a mix)
2 large eggs
¼ cup sour cream or plain yogurt
2 tbsp melted butter
¼ cup all-purpose flour
½ tsp salt (adjust to taste)
¼ tsp black pepper
½ tsp garlic powder (optional)
2 tbsp chopped parsley or green onions (optional)
👩🍳 Instructions
- Preheat oven to 200°C (400°F). Lightly grease a muffin tin.
- In a large bowl, mix mashed potatoes, eggs, sour cream, and melted butter until smooth.
- Stir in cheese, flour, salt, pepper, garlic powder, and herbs.
- Spoon the mixture into the muffin tin, filling each cup about ¾ full.
- Bake for 25–30 minutes, or until puffed up and golden on top.
- Let cool for a few minutes, then gently remove from the tin.
