Christmas Cranberry Pound Cake

🧈 Ingredients

1 cup (225 g) butter, softened

1 cup sugar

3 large eggs

1½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

½ cup milk

1 tsp vanilla extract

1 cup fresh or dried cranberries

Zest of 1 orange or lemon (optional but festive!)


⏱️ Instructions

  1. Prep oven: Preheat to 180°C / 350°F. Grease a loaf pan.
  2. Cream butter & sugar: Mix until light and fluffy (2–3 minutes).
  3. Add eggs: Beat in eggs one at a time.
  4. Dry ingredients: In a bowl, whisk flour, baking powder, and salt.
  5. Combine: Add dry ingredients to the batter, alternating with milk.
  6. Flavor it: Stir in vanilla, zest, and cranberries (lightly flour cranberries so they don’t sink).
  7. Bake: Pour into pan and bake 45–55 minutes, until a toothpick comes out clean.
  8. Cool & enjoy: Let cool slightly, slice, and enjoy!

🎁 Optional Glaze (2 minutes!)

½ cup powdered sugar

1–2 tbsp orange or lemon juice
Drizzle over cooled cake for extra holiday magic ✨
