Cranberry Orange White Chocolate Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 orange
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1/2 cup buttermilk (or regular milk)
  • 1/2 cup white chocolate chips
  • 1/2 cup fresh cranberries (chopped, if large)
  • For the Frosting: 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tbsp fresh orange juice
  • 1/2 cup white chocolate chips, melted
  • Zest of 1/2 orange (for garnish)
  • Fresh cranberries (for garnish)
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add in the eggs, one at a time, mixing well after each addition.
  3. Stir in the fresh orange juice and buttermilk, followed by the orange zest. Mix until just combined.
  4. Gradually add the dry flour mixture to the wet ingredients, mixing until fully combined.
  5. Gently fold in the chopped cranberries and white chocolate chips until evenly distributed.
  6. Spoon the batter into the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until smooth. Add powdered sugar, one cup at a time, mixing well after each addition. Mix in the fresh orange juice and melted white chocolate. Continue beating until the frosting is smooth and creamy.
  9. Once the cupcakes have cooled, frost them generously with the white chocolate orange frosting.
