Holiday Cranberry Pistachio Cream Cheese Celebration Log
Ingredients:
16 oz full-fat cream cheese, softened
1 cup white cheddar or gouda, finely shredded
1/2 cup dried cranberries, finely chopped
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh chives, finely chopped
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup pistachios, finely chopped (for coating)
1/2 cup dried cranberries, finely chopped (for coating)
Directions:
In a large mixing bowl, combine softened cream cheese, shredded white cheddar, chopped cranberries, parsley, chives, garlic powder, and black pepper.
Mix until smooth and evenly combined.
Spoon the mixture onto a sheet of plastic wrap and shape into a compact log.
Wrap tightly and refrigerate for at least 2 hours, or until firm.
On a shallow plate, mix chopped pistachios and dried cranberries.
Unwrap the chilled cheese log and roll it in the pistachio-cranberry mixture, gently pressing to coat evenly.
Transfer to a serving platter and garnish with rosemary sprigs and extra cranberries if desired.
Serve with crackers and sliced baguette.
