•1 lb (450 g) ground beef
•1 medium onion, finely diced or thinly sliced
•8 slices of Texas toast or thick white bread
•8 slices Swiss or provolone cheese
•2 tablespoons butter (for grilling)
•Salt & black pepper, to taste
•Optional: garlic powder, smoked paprika for seasoning

•¼ cup mayonnaise
•2 tablespoons ketchup
•1 tablespoon Dijon mustard
•1 tablespoon sweet pickle relish
•½ teaspoon Worcestershire sauce
•Pinch of smoked paprika
