Red Fruit Ice Cream Log

- 4 large eggs
- 100g granulated sugar
- 100g all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 500ml vanilla ice cream (softened)
- 200g mixed red berries (such as raspberries, strawberries, cranberries)
- 50g powdered sugar
- 1 teaspoon lemon juice
- Fresh berries (raspberries, blackberries, and cranberries) for decoration
- Icing sugar for dusting
- Snowflake decorations (optional)
- Preheat your oven to 180°C (350°F). Line a 9x13-inch baking sheet with parchment paper. 2. In a bowl, whisk the eggs and granulated sugar until light and fluffy (about 5 minutes) using an electric mixer on high speed. 3. Add the vanilla extract and a pinch of salt, mixing until incorporated. 4. Sift the flour and baking powder together and gently fold into the egg mixture, taking care not to deflate the batter. 5. Pour the batter onto the prepared baking sheet and spread it evenly. 6. Bake for 8-10 minutes, or until the cake is lightly golden and springs back when touched. 7. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar. 8. Once the cake is done, immediately invert it onto the prepared towel, removing the parchment paper. Roll the cake up with the towel inside, and let it cool completely. 9. In a medium bowl, combine the softened vanilla ice cream with the mixed red berries, powdered sugar, and lemon juice. Gently fold the ingredients together until well combined. 10. Once the cake is completely cool, gently unroll it. 11. Spread a generous layer of the ice cream mixture over the inside of the cake, then carefully re-roll the cake, using the towel to help guide it. 12. Place the rolled cake onto a serving platter, seam side down. 13. Transfer the cake to the freezer and let it set for at least 2 hours or until firm. 14. Before serving, dust the top of the cake with icing sugar to give it a 'snowy' effect. 15. Decorate with fresh berries and optional snowflake decorations. 16. Slice and serve this refreshing treat during the holidays or any special occasion.
