Sourdough-Style Bread

A beautifully domed, golden, rustic loaf with a chewy interior and that classic sourdough tang — but completely keto-friendly. No long fermentation needed, no starter required, and no gluten. Perfect for sandwiches, toast, or dipping in soups.

Ingredients
Dry Ingredients

2 cups almond flour

⅓ cup coconut flour

¼ cup psyllium husk powder (gives real bread texture + rise)

2 tsp baking powder

1 tsp salt

Wet Ingredients

4 large eggs, room temperature

2 tbsp apple cider vinegar (provides sourdough-style tang)

½ cup warm water

¼ cup sour cream or plain Greek yogurt (keto)

2 tbsp melted butter or olive oil

Optional Add-ins (for sourdough flavor)

½ tsp yeast (for aroma only — not for rising)

½ tsp lactic acid powder or a splash more ACV

1 tsp caraway seeds, rosemary, or flax seeds

Instructions

  1. Preheat the Oven

Preheat to 375°F (190°C).
Place a Dutch oven or heavy pot inside to heat (this mimics real sourdough baking).

  1. Mix Dry Ingredients

In a large bowl, whisk together:

almond flour

coconut flour

psyllium husk powder

baking powder

salt

Break up any lumps.

  1. Add Wet Ingredients

In a separate bowl, beat together:

eggs

apple cider vinegar

sour cream

melted butter

Pour wet mixture into dry mixture.
Add warm water and mix until a dough forms — it will thicken within 30 seconds due to psyllium.

It should resemble a soft sourdough dough ball.

  1. Shape the Loaf

Form into a round boule shape using wet hands.
Sprinkle lightly with almond flour for that rustic, floured look.
Let rest 5 minutes to firm up.

  1. Bake Sourdough-Style

Remove the hot pot from oven.
Place a piece of parchment under the dough and lower it into the pot.

Bake covered for 40 minutes.
Then remove lid and bake 10–15 more minutes until deeply golden.

  1. Cool Completely

This step is essential.
Cooling allows the structure to set and prevents gumminess.

Let cool on a rack for at least 1 hour.
