⭐ Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce

🧾 Ingredients

For the Salmon

2 salmon fillets

1 tbsp olive oil

2 tbsp butter

Salt & black pepper (to taste)

½ tsp paprika (optional for color)

½ tsp garlic powder (optional)

For the Creamy Garlic Sauce

1 tbsp butter

3–4 cloves garlic, minced

1 cup sliced mushrooms

2 cups fresh spinach

½ cup heavy cream (or half & half)

¼ cup chicken broth (or water)

¼ cup grated Parmesan cheese

½ tsp Italian seasoning

Salt & pepper to taste

Squeeze of lemon (optional but amazing!)


🔥 Instructions

1️⃣ Sear the Salmon

  1. Pat salmon dry and season with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil + 2 tbsp butter in a skillet over medium-high heat.
  3. Place salmon skin-side down (if using skin-on) and cook 4–5 minutes until golden.
  4. Flip and cook another 2–3 minutes, until salmon is 90% cooked.
  5. Remove salmon from the pan and set aside.

2️⃣ Cook the Vegetables

  1. In the same skillet, add 1 tbsp butter.
  2. Add the garlic and cook 30 seconds until fragrant.
  3. Add mushrooms and cook 3–4 minutes until softened and browned.
  4. Add spinach and stir until wilted.

3️⃣ Make the Creamy Sauce

  1. Pour in the chicken broth, scraping brown bits from the pan for flavor.
  2. Add the heavy cream, Parmesan, and Italian seasoning.
  3. Stir and simmer for 2–3 minutes until thickened slightly.
  4. Taste and season with salt, pepper, and lemon juice if desired.

4️⃣ Bring It All Together

  1. Return the salmon fillets to the pan, spoon sauce over the top.
  2. Lower heat and simmer 2 minutes so flavors combine.

Serve over mashed potatoes

With rice, pasta, or roasted vegetables

Don’t overcook salmon — it should be juicy and flaky.
