✨ These Classic Funfetti Cream Cheese Mints are the ultimate nostalgic, no-bake treat. They are smooth, creamy, and melt instantly on your tongue with a cool burst of peppermint. Packed with colorful sprinkles, they are perfect for holidays, baby showers, or just a sweet bite after dinner. Best of all, they come together in one bowl with no baking required!

Ingredients:

8 oz (226g) Cream cheese, softened (brick style is best)

4 tbsp (56g) Unsalted butter, softened

1 tsp Peppermint extract (or almond/vanilla for a milder flavor)

4 – 5 cups Powdered sugar (Confectioners’ sugar)

½ cup Rainbow sprinkles (Jimmies work best so the color doesn’t bleed)

Granulated sugar (for coating the outside)

Steps:

Cream the Base: In a large bowl, beat the softened cream cheese and butter until completely smooth and free of lumps. Add the peppermint extract and mix well.

Add Sugar: Gradually add the powdered sugar, one cup at a time, mixing on low speed. Keep adding sugar until the mixture forms a stiff dough that isn’t sticky (texture should be similar to playdough).

Add Color: Gently knead in the rainbow sprinkles by hand or with a spatula until evenly distributed.

Shape: Pinch off small pieces of dough and roll them into 1-inch balls. Roll each ball in granulated sugar for a sparkly, crunchy finish.

Flatten: Place the balls on a parchment-lined baking sheet. Gently press down on each one with the tines of a fork (or the bottom of a glass) to flatten them slightly.

Dry & Set: Let the mints sit at room temperature for at least 2 hours (or overnight) to “dry” and harden on the outside while staying creamy on the inside. Store in an airtight container in the refrigerator.
