🍎🔥 Apple–Honey Jalapeño Pepper Jam 🍯🌶️

Ingredients:
- 2 cups finely chopped apples (peeled or unpeeled, your choice)
- 1 cup honey
- 1 cup apple cider vinegar
- 1 red bell pepper, finely chopped
- 1–2 jalapeño peppers, finely minced (seeds removed for mild, keep some for heat)
- 3 cups granulated sugar
- 1 (1.75 oz) box powdered fruit pectin
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional, for warmth)
Instructions:
- In a large saucepan, combine apples, bell pepper, jalapeños, apple cider vinegar, honey, salt, and cinnamon if using.
- Bring mixture to a boil over medium-high heat, stirring frequently.
- Stir in the powdered pectin and return to a rolling boil for 1 minute.
- Add sugar all at once, stirring constantly until dissolved.
- Bring back to a full rolling boil and boil hard for 2 minutes, stirring continuously.
- Remove from heat and skim off any foam if needed.
- Carefully ladle hot jam into sterilized jars, leaving about 1/4-inch headspace.
- Seal jars and process in a boiling water bath for 10 minutes, or let cool and refrigerate if not canning.
