Ingredients
1½ cups all-purpose flour
2½ teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt
1¼ cups milk
1 large egg
3 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract (optional)
Instructions
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
In another bowl, whisk the milk, egg, melted butter (or oil), and vanilla.
Pour the wet ingredients into the dry ingredients and mix gently until just combined.
Do not overmix — the batter should be slightly lumpy.
Let the batter rest for 5–10 minutes.
Heat a non-stick pan over medium heat and lightly grease it.
Pour about ¼ cup of batter for each pancake.
Cook until bubbles appear on the surface, then flip and cook for another 1–2 minutes until golden brown.
