Ingredients:

  • 4 blood oranges (zest and juice)
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1–2 chili peppers, finely minced (Fresno or red chili; adjust to taste)
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon pectin (or use longer simmer for natural set)
  • Pinch of salt

Instructions:

  1. Zest the blood oranges, then juice them. Remove seeds.
  2. In a saucepan, combine orange juice, zest, sugar, lemon juice, chili peppers, ginger, and salt.
  3. Bring to a gentle boil over medium heat, stirring frequently.
  4. Reduce heat and simmer 25–30 minutes until thickened and glossy.
  5. Stir in pectin (if using) and cook 2–3 more minutes.
  6. Test thickness by spooning a little onto a cold plate—if it wrinkles when pushed, it’s ready.
  7. Remove from heat and let cool slightly before transferring to jars.

Pro Tip:
This jam is incredible brushed over grilled chicken or salmon, or served with cream cheese and crackers for an easy appetizer 🧀🔥
