Ingredients:
- 4 blood oranges (zest and juice)
- 1 cup sugar
- 1 tablespoon lemon juice

- 1 tablespoon pectin (or use longer simmer for natural set)
- Pinch of salt
Instructions:
- Zest the blood oranges, then juice them. Remove seeds.
- In a saucepan, combine orange juice, zest, sugar, lemon juice, chili peppers, ginger, and salt.
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce heat and simmer 25–30 minutes until thickened and glossy.
- Stir in pectin (if using) and cook 2–3 more minutes.
- Test thickness by spooning a little onto a cold plate—if it wrinkles when pushed, it’s ready.
