Christmas Ricotta Chia Pudding – Instructions

1–2 tablespoons honey or maple syrup (to taste)

½ teaspoon vanilla extract

¼ teaspoon cinnamon

A pinch of nutmeg (optional, for holiday flavor)

Fresh berries (cranberries, raspberries, strawberries) for topping

Optional: orange zest, pomegranate seeds, crushed pistachios


✨ Directions

1️⃣ Mix the Base

In a bowl, whisk together:

½ cup ricotta cheese

2 tablespoons chia seeds

¼ cup milk

1–2 tablespoons honey

½ teaspoon vanilla

¼ teaspoon cinnamon

A pinch of nutmeg

Mix until smooth and fully combined.


2️⃣ Rest & Thicken

Cover the bowl and let it sit for:

15 minutes, then stir again (to prevent clumping).

Transfer to the fridge and chill for 2–3 hours, or overnight for best texture.
The chia seeds will absorb the liquid and make it thick and creamy.
