🥥🌶️ Coconut–Pineapple Chili Island Jam 🍍✨
A glossy, spoonable jam with bright pineapple, creamy coconut, and a gentle chili warmth — perfect for toast, cheese boards, grilled meats, or even shrimp 😍
🧾 Ingredients
3 cups fresh pineapple, finely chopped
1 cup unsweetened coconut milk (full-fat for best flavor)
1½ cups granulated sugar
2 tbsp fresh lime juice
1–2 small red chilies, finely minced (adjust to taste)
½ tsp salt
1 tsp vanilla extract (optional but delicious)
2 tbsp cornstarch + 2 tbsp water (slurry, optional for thicker jam)
🔥 Instructions
Combine & cook
In a heavy saucepan, add pineapple, coconut milk, sugar, lime juice, chilies, and salt.
Simmer
Bring to a gentle boil over medium heat, stirring often. Reduce heat and simmer uncovered for 25–30 minutes, until thickened and glossy.
Thicken (optional)
If you want a firmer jam, stir in the cornstarch slurry and simmer 2–3 more minutes until it coats the spoon.
Finish
Remove from heat and stir in vanilla extract.
Cool & store
Let cool completely. Transfer to a clean jar and refrigerate up to 2 weeks.
