Crockpot Cream Cheese Chicken Chili (MUST-MAKE!)
Creamy, comforting, and packed with flavor — this is one of those dump-and-go slow cooker meals everyone asks for again.
📝 Ingredients
2 boneless, skinless chicken breasts
1 block (8 oz / 225 g) cream cheese
1 packet ranch seasoning
1 packet taco seasoning
1 can corn (not drained)
1 can Rotel (diced tomatoes & green chilies) (not drained)
1 can black beans, drained & rinsed
🍲 Instructions
Place chicken breasts in the bottom of the crockpot
Sprinkle ranch seasoning and taco seasoning over chicken
Add corn (with liquid), Rotel (with liquid), and black beans
Place the block of cream cheese on top
Cover and cook on LOW for 6–7 hours
🔥 Finish
Shred chicken directly in the crockpot using two forks
Stir everything together until the cream cheese is fully melted and creamy
Taste and adjust seasoning if needed
🍽️ Serve With
Tortilla chips or cornbread
Rice
Toppings: shredded cheese, sour cream, green onions, jalapeños 😍
