🔥 Garlic Herb Roasted Potatoes, Carrots, and Zucchini
Crispy roasted potatoes with tender carrots and zucchini, coated in garlic, herbs, and olive oil. Simple, healthy, and packed with flavor!
🛒 Ingredients
3 medium potatoes, cubed
1¼ lb baby potatoes, halved
4 carrots, sliced
2 zucchinis, sliced
3 tbsp olive oil
4 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary (or Italian seasoning)
Salt and black pepper to taste
Optional: chili flakes, paprika, or grated parmesan
👩‍🍳 Instructions
Preheat oven
Preheat oven to 200°C (400°F).
Season vegetables
In a large bowl, add potatoes, carrots, and zucchini.
Drizzle with olive oil, add garlic, herbs, salt, and pepper. Toss well.
Roast
Spread vegetables on a large baking sheet in a single layer.
Roast for 35–40 minutes, flipping halfway, until golden and tender.
Finish & serve
Taste and adjust seasoning.
Sprinkle parmesan or fresh herbs if desired.
🌟 Tips
For extra crispiness, roast potatoes 10 minutes first, then add zucchini
Add onion or bell peppers for more flavor
