Grilled Garlic Herb Lamb Chops

Ingredients
2–3 lbs lamb chops (about 12–15 pieces)
3 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped (or 1½ tsp dried)
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme (or 1 tsp dried)
Juice of ½ lemon
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
Instructions
Make the Marinade
In a bowl, mix olive oil, garlic, herbs, lemon juice, salt, pepper, and paprika.
Marinate the Lamb
Coat lamb chops well with the marinade.
Cover and marinate for 30 minutes to 2 hours (overnight for deeper flavor).
Preheat the Grill
Heat grill to medium-high.
Grill the Chops
Grill lamb chops for 3–4 minutes per side for medium-rare,
or 4–5 minutes per side for medium.
Rest & Serve
Let rest for 5 minutes, then serve hot.
