Hawaiian Chicken Pineapple Kebabs
Ingredients
For the Kebabs
1 lb (450 g) boneless, skinless chicken breast or chicken thighs, cut into chunks
1 cup fresh pineapple, cut into chunks
1 red onion, cut into chunks
1 green bell pepper (or any color bell pepper), cut into chunks
For the Marinade
¼ cup soy sauce
2 tbsp honey or brown sugar
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh lemon juice or pineapple juice
1 tsp grated fresh ginger (optional)
½ tsp black pepper
Instructions
Marinate the chicken
In a bowl, mix soy sauce, honey, olive oil, garlic, lemon juice (or pineapple juice), ginger, and black pepper.
Add the chicken pieces, toss to coat, cover, and marinate for at least 30 minutes (up to 8 hours).
Assemble the kebabs
Thread chicken, pineapple, onion, and bell pepper pieces onto skewers, alternating ingredients.
Cook the kebabs
Grill: Cook over medium heat for 10–12 minutes, turning occasionally, until chicken is cooked through.
Oven: Bake at 200°C (400°F) for 18–22 minutes, turning once.
Pan: Cook in a grill pan over medium heat until nicely charred and cooked through.
Serve
Let rest for a few minutes and serve hot.
Serving Ideas
Steamed rice or coconut rice
Fresh salad
Extra pineapple or teriyaki sauce on the side
