Serves: 4 | Comfort food with a protein boost
🧾 Ingredients
1 tbsp butter
1 large yellow onion, diced
2 large carrots, peeled & diced
1 stalk celery, diced
2 cloves garlic, minced
¼ cup all-purpose flour (or gluten-free flour)
½ tsp smoked paprika
3 cups vegetable broth (“not-chicken” style works great)
4 cups broccoli florets, chopped
1½ cups milk (or unsweetened almond milk)
1 cup cottage cheese (blended smooth)
1½ cups sharp cheddar cheese, shredded
Salt & black pepper to taste
Pinch of nutmeg (optional)
🔥 Instructions
1️⃣ Sauté vegetables
Melt butter in a large pot over medium heat.
Add onion, carrots, and celery. Cook 6–8 minutes until soft.
Stir in garlic and cook 30 seconds.
2️⃣ Make the roux
Sprinkle flour and smoked paprika over veggies.
Stir constantly for 1 minute to remove raw flour taste.
3️⃣ Add broth & broccoli
Slowly whisk in vegetable broth.
Add broccoli, salt, and pepper.
Bring to a gentle simmer and cook 10–12 minutes until broccoli is tender.
4️⃣ Blend (optional)
For a creamier texture, blend half the soup and return it to the pot.
5️⃣ Protein boost
Lower heat. Stir in milk and blended cottage cheese until smooth.
6️⃣ Add cheese
Add cheddar gradually, stirring until melted.
Do not boil after adding cheese.
7️⃣ Taste & serve
Adjust seasoning and add nutmeg if using.
