📝 Ingredients

For the Cake:

1 ½ cups (3 sticks) unsalted butter, room temperature

1 (8 oz) package cream cheese, room temperature

3 cups granulated sugar

6 large eggs

3 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

2 teaspoons vanilla extract

2 cups diced fresh strawberries

1 tablespoon flour (for tossing strawberries)


For the Glaze:

2 cups powdered sugar

2–3 tablespoons milk or heavy cream

½ teaspoon vanilla extract

Optional:

1–2 tablespoons strawberry puree or

A few drops red/pink food coloring


✨ Instructions

1️⃣ Prepare the Strawberries

  1. Wash, dry, and dice the fresh strawberries into small cubes.
  2. Add 1 tablespoon flour to the strawberries and gently toss.

This prevents them from sinking to the bottom of the cake.

  1. Set aside.

2️⃣ Prepare the Batter

  1. Preheat your oven to 325°F (165°C).
  2. Grease and flour a bundt pan or a large loaf pan.
  3. In a large mixing bowl, beat the butter and cream cheese together until smooth and creamy (about 2 minutes).
  4. Add the granulated sugar slowly, beating on medium speed until the mixture becomes light and fluffy (3–4 minutes).
  5. Add the eggs one at a time, mixing well after each addition.
  6. Add the vanilla extract and mix again.

  1. In a separate bowl, whisk together:

  3. Gently fold in the flour-coated strawberries using a spatula.

  1. Pour the batter evenly into the prepared bundt pan.
  2. Smooth the top with a spatula.
  3. Bake at 325°F (165°C) for 75–90 minutes (depending on your oven).

A toothpick should come out clean or with few moist crumbs.

  1. Adjust consistency:

Add more milk → thinner glaze

Add more sugar → thicker glaze

OR add a drop of pink food coloring

  1. Once the cake is fully cooled, drizzle the glaze generously over the top.
