🍯🍋 Honey Lime Chicken and Avocado Rice Stack
Ingredients
For the Chicken
2 boneless, skinless chicken breasts (sliced into strips)
2 tbsp honey
Zest of 1 lime
Juice of 1 lime (about 2 tbsp)
2 tbsp soy sauce (or low-sodium)
2 cloves garlic, minced
1 tbsp olive oil
½ tsp paprika
½ tsp black pepper
Salt to taste
For the Rice
2 cups cooked jasmine or basmati rice (warm)
1 tbsp butter or olive oil
Juice of ½ lime
Salt to taste
2 tbsp chopped cilantro (optional)
For the Avocado Layer
2 ripe avocados
Juice of ½ lime
Salt and black pepper to taste
2 tbsp chopped red onion (optional)
Optional Toppings
Sesame seeds
Extra chopped cilantro
Chili flakes or hot sauce
Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk together honey, lime zest, lime juice, soy sauce, garlic, olive oil, paprika, salt, and pepper.
Add chicken strips and marinate for 15–30 minutes.
2️⃣ Cook the Chicken
Heat a skillet over medium-high heat.
Add the marinated chicken and cook for 4–5 minutes per side until caramelized and cooked through.
Let the sauce thicken slightly and coat the chicken. Remove from heat.
3️⃣ Prepare the Rice
Mix warm rice with butter (or olive oil), lime juice, salt, and cilantro. Fluff gently.
4️⃣ Mash the Avocado
In a bowl, mash avocados with lime juice, salt, pepper, and red onion if using. Keep slightly chunky.
5️⃣ Assemble the Stack
Using a bowl or ring mold:
Layer lime rice on the bottom
Add avocado mixture
Top with honey lime chicken
Gently remove the mold and garnish as desired.
