Loaded Seafood Baked Potato with Creamy Cajun Sauce 🧀✨
Crispy on the outside, fluffy on the inside — stuffed with juicy shrimp, tender crawfish, and a rich, cheesy cream sauce that tastes like a high-end seafood restaurant!
Ingredients
For the Potatoes
2 large russet potatoes
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
⅓ cup Colby Jack cheese, shredded
⅓ cup mozzarella cheese, shredded
For the Seafood Filling
8 oz shrimp, peeled, deveined & chopped
8 oz crawfish tails (or extra shrimp)
2 tbsp butter
3 cloves garlic, minced
½ cup heavy cream
¼ cup chicken or seafood broth
½ tsp Cajun seasoning
½ tsp paprika
½ tsp Old Bay seasoning
¼ tsp black pepper
¼ tsp salt (to taste)
⅓ cup Parmesan cheese
2 tbsp cream cheese
2 tbsp chopped green onions
Toppings
Extra shredded cheese
Chopped parsley or green onions
Optional: sour cream or drizzle of garlic butter
Instructions
1️⃣ Bake the Potatoes
Preheat oven to 400°F (200°C).
Scrub potatoes clean, dry, rub with olive oil, salt & pepper.
Bake directly on rack for 50–60 minutes until fork-tender.
2️⃣ Make the Creamy Seafood Sauce
In a skillet, melt butter over medium heat.
Add garlic, sauté 30 seconds until fragrant.
Add shrimp & crawfish, cook 2–3 minutes until shrimp turns pink.
Pour in broth and cream.
Add Cajun seasoning, paprika, Old Bay, salt & pepper.
Stir in Parmesan and cream cheese.
Simmer 4–5 minutes until thick and creamy.
Stir in green onions.
3️⃣ Stuff the Potatoes
Slice potatoes open lengthwise.
Fluff the inside with a fork.
Add a spoonful of butter or sour cream (optional).
Fill generously with creamy seafood mixture.
Top with Colby Jack & mozzarella.
4️⃣ Final Bake
Bake again for 10–15 minutes until cheese is melted and bubbly.
5️⃣ Garnish & Serve
Top with parsley, green onions, and a drizzle of garlic butter 😍
