Quick & Easy Stuffed Potato Cakes

🧺 Ingredients

3 cups mashed potatoes (cold or leftover works best)

1 cup shredded mozzarella or cheddar cheese

¼ cup chopped green onions

1 egg

¼ cup all-purpose flour (plus more for dusting)

Salt, to taste

Black pepper, to taste

1 tbsp oil or butter (for frying)

Optional Fillings:

Cooked bacon bits

Sautéed mushrooms

Cooked ground meat

👩‍🍳 Instructions

1️⃣ Mix the base. In a large bowl, combine mashed potatoes, egg, flour, green onions, salt, and pepper. Mix until smooth and easy to handle.

2️⃣ Add the cheesy goodness. Stir in the shredded cheese, or keep it aside if you prefer stuffing the centers for extra meltiness.

3️⃣ Shape the cakes. Scoop a portion of the mixture, flatten it in your hand, add optional fillings if using, then seal and shape into a patty. Lightly dust with flour.

4️⃣ Heat the pan. Add oil or butter to a skillet over medium heat and let it get hot.

5️⃣ Fry until golden. Cook the potato cakes until crispy and golden on both sides, flipping carefully.

6️⃣ Serve and enjoy. Serve hot with sour cream, yogurt, or your favorite dip — crispy outside, cheesy inside, total comfort food bliss!
