Ribeye Steak Bites & Cheesy Smashed Potatoes
🥩 Steak Bites
Ingredients
1 lb beef sirloin or tenderloin (cut into bite-size pieces)
Salt & black pepper, to taste
1 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 tsp fresh rosemary or thyme (optional)
Instructions
1️⃣ Season the beef
Pat steak dry and season generously with salt and black pepper.
2️⃣ Sear hot & fast
Heat olive oil in a skillet over medium-high heat. Add steak in a single layer. Sear 2–3 minutes per side until browned and juicy. Remove and set aside.
3️⃣ Garlic butter finish
Reduce heat to medium. Add butter and garlic to the pan. Stir until fragrant (about 30 seconds). Return steak to the pan, toss to coat, and sprinkle with herbs if using. Serve immediately.
🧀 Cheesy Smashed Potatoes
Ingredients
1½ lbs baby potatoes
Salt for boiling
2 tbsp olive oil or melted butter
½ tsp garlic powder
½ tsp paprika
Salt & pepper to taste
1 cup shredded mozzarella or cheddar
¼ cup grated Parmesan
Fresh parsley (optional)
Instructions
1️⃣ Boil potatoes
Boil potatoes in salted water until fork-tender. Drain.
2️⃣ Smash & season
Place potatoes on a baking sheet. Smash gently. Drizzle with oil or butter, sprinkle garlic powder, paprika, salt, and pepper.
3️⃣ Bake & cheese
Bake at 425°F (220°C) for 20 minutes until crispy. Sprinkle cheeses on top and bake 5 more minutes until melted and bubbly.
