Sausage Dipped Pancakes
Ingredients
1 lb ground breakfast sausage
1 cup shredded mozzarella or cheddar cheese
2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
½ tsp salt
2 eggs
1½ cups milk
2 tbsp melted butter or oil
Wooden skewers or popsicle sticks (optional)
Instructions
Cook the Sausage
Brown the sausage in a skillet over medium heat until fully cooked.
Drain excess grease and let cool slightly.
Shape into small sausage logs or patties.
Insert skewers if using.
Make the Pancake Batter
In a bowl, whisk flour, sugar, baking powder, and salt.
Add eggs, milk, and melted butter.
Mix until just combined (don’t overmix).
Stir in shredded cheese.
Dip the Sausage
Dip each sausage piece into the pancake batter, coating well.
Cook
Heat a non-stick skillet or griddle over medium heat.
Lightly grease.
Cook dipped sausages for 2–3 minutes per side until golden and cooked through.
Serve
Serve warm with maple syrup, honey, or ketchup for dipping 🍯🍁

Add a pinch of cinnamon to the batter for a sweet-savory twist.
Use mini sausages for bite-size versions.
